Cantaloupe Chutney

 
 

Fresh Cantaloupe Chutney…

1 ½ cups chopped cantaloupe (pre ripe is fine)

½ teaspoon cloves

1 teaspoon allspice

½ teaspoon cinnamon

1/2 cup sugar

1/4 cup plus 2 tablespoons apple cider vinegar

3 tablespoons dried currants or Anneth Farm dried blueberries

2 tablespoons minced peeled fresh ginger or 1 tsp powdered ginger

Put all ingredients in a medium saucepan, bring to a boil then simmer for 30 minutes. Mixture should be thick and very syrupy. Serve immediately with your favourite main dish or make a large batch and preserve using hot water bath method. This is really tasty on sandwiches!
